It is rare these days to know just where your food comes from and how it got from its source to your dinner table. This very thought inspired Philip Krajeck, chef de cuisine of WaterColor Inn & Resort’s acclaimed Fish Out of Water restaurant, to create an innovative “Farm Dinner” series. The next event, scheduled for April 5, will serve up fresh, local and regionally produced and procured foods along with a discussion about the derivation of the ingredients and importance of seasonal eating.
In creating this second “Farm Dinner” menu, Chef Krajeck, who was recently named a semi-finalist for “Best Chef: South” by the James Beard Foundation Awards 2009, believed the integrity and provenance of the food should be paramount. During the intimate dinner for 40, Chef Krajeck and guest speakers Jeremy and Jessica Little of Sweet Grass Dairy in Thomasville, GA, will talk about how the vegetables, fish, meats and cheeses being served were harvested and produced and how best to prepare them.
The four-course dinner will begin at 6:30pm outdoors (weather permitting) on The Green at WaterColor Inn with aperitifs and appetizers such as Sweet Grass Dairy cheese and charcuterie made from heritage pork raised by Henry Fudge. Dishes will be served both family style and individually plated, featuring ingredients such as local Gulf fish and organic produce. Each course will be paired with a glass of wine.
Recognized as one of the “Hot 10 Culinary Country Inns” in the United States by Bon Appétit magazine, WaterColor Inn & Resort has established itself as a landmark for foodies. In addition to “Farm Dinners,” the resort offers a three-night “Foraging the Forgotten Coast” tour, a hands-on expedition where participants learn new skills like oyster tonging, crabbing, organic farming, tupelo honey harvesting and flounder gigging. Guests can also always savor Chef Krajeck’s coastal-inspired dishes everyday at Fish Out of Water.
